Sushi

------------------------------------------------------

There's so many parts to this I don't really know where to start. Okay....
1) Gomashio: It is truly the most delicious seasoning I've ever tasted. You don't need to make it but it takes the sushi to a whole new level and you will use the rest. Sprinkle it on rice, baked potatoes, stir fry, use it in salad instead of salt, serve it with bread and olive oil like dukkah. It's unbelievable. Recipe here.
2) Julienne some spring onions (green onions/scallions), cucumber (seeds scraped out first) and slice an avocado or two. You can include a couple or all of these plus a sprinkling of gomashio in every roll, along with the main filling.
3) Here is a servicable tutorial on rolling makizushi. But seriously, lady, an all cucumber sushi roll? All aboard the Flavour Express!
4) Here is the recipe I use for making sushi rice except I use the rice cooker. Don't bother fanning the rice either. Get an electric fan and point it at the rice as you stir. It's much quicker and easier!

Fillings:

Kimchi: I used my homemade kimchi that I make using my mum's recipe found on her blog. I make it with julienned carrots and chopped cabbage, not big chunky carrots and daikon like in the recipe. That would be ridiculous in sushi. You can buy kimchi which is also delicious but drain most of the liquid and chop it a little.
Roll with julienne cucumber, spring onion and gomashio.

Roasted sweet potato: This is barely a recipe, it's embarrassing. My mum makes sushi with this, though, and it's unbelievably good.
Slice two large sweet potatoes in half lengthwise and place cut side down on a lined baking tray. Roast for half an hour at 200°C (390°F) or until flesh is very soft.
Once the potatoes are cool enough to handle, scoop the flesh out and mash. Season with soy sauce to taste.
Roll with julienne cucumber, spring onion, avocado and gomashio.

Sriracha tuna: Also barely a recipe.
Drain a 425g (15oz.) tin of tuna in springwater and break up the flakes in a bowl. Add sriracha and Kewpie mayonnaise to taste (I used 5 tbs of each) and mix together.
Roll with julienne cucumber, spring onion, avocado and gomashio.

Teriyaki chicken: I was going to make chicken teriyaki from scratch but I ran out of time. Also, lazy!
I combined 8 chicken thighs (trimmed of fat), a bottle of teriyaki sauce and a cup of water in a wok. Bring to a boil and then simmer til the sauce is very reduced and coats the thighs. Slice the chicken thighs thinly and stir the slices with the remaining teriyaki sauce in the wok.
You won't use all of it on sushi (unless you're catering a wedding or something), so use the leftovers for another meal.
Roll with julienne cucuber, spring onion, avocado and gomashio.

Finally, if you're interested in the green tea mousse I made for dessert, the recipe can be found here. I bought a packet of sweet red beans from the Asian grocer, mashed them and served a spoonful on top of each serving. They compliment each other perfectly!

Parmesan & Walnut Waffles With Creamy Basil Sauce

Adapted from Waffles: From Morning To Midnight by Dorie Greenspan

1 1/2 cups flour
2 tsp baking powder
1/2 tsp salt
1 1/2 cups milk
2 eggs, lightly beaten
3/4 cup grated Parmesan (pro tip: don't do what I did and grate the cheese over the cup measure at the last minute)
1/3 cup chopped walnuts
1/4 cup EVOO
300ml sour cream
bunch of basil, leaves picked off the stalks
100g baby spinach
2 cloves garlic
 ----------

1. Preheat your waffle iron as per its instructions. Preheat oven to 100°C (200°F) if you want to serve all the waffles at once.

2. Whisk together the flour, baking powder and salt. Add the milk and eggs and stir to combine. Fold in the Parmesan, walnuts and then, lastly, the oil.

3. Cook waffles according to the iron's instructions (mine yielded 8 square waffles), stashing them in the oven as the cook if that's how you're rolling.

4. MEANWHILE make the sauce. Finely chop (by hand or by food processor) the basil, spinach and garlic together. In a bowl, combine the basil stuff and the sour cream and season with S&P to taste.

5. Serve waffles with the sauce and an awesome salad. YUUUUUM!! (I also made a side of those beans from last week's blog to go with.)

Roasted Onion, Rocket and Pecorino Salad & Puy Lentil, Red Onion and Sun-Dried Tomato Salad

Adapted from 100 Meals In Minutes by Ainsley Harriott

Roasted Onion, Rocket and Pecorino Salad

12 baby onions, cut in half (or 3 brown onions cut into 8)
3 tbs olive oil
salt and pepper to taste
1 tbs balsamic vinegar
50g Pecorino or Parmesan
100g rocket leaves (I used baby spinach because Michael hates rocket)
-----

Preheat the oven to 200°C (400°F)

Toss the onions with the olive oil and season to taste. Roast for 25-30 minutes until golden brown and soft.

Drizzle balsamic over onions and let them cool until they're room temperature.

Shave the cheese with a vegetable peeler and toss with the rocket. Drizzle with the pan juices from the onions and toss together.

Arrange the rocket salad on a platter (as chalantly or non- as you like) and top with the onions. Serve!

Puy Lentil, Red Onion and Sun-Dried Tomato Salad

2 tins lentils, rinsed and drained
100g Danish feta, crumbled
1 clove garlic, minced
1 red onion, chopped
50g semi sun-dried tomatoes
2 tbs balsamic vinegar
4 tbs olive oil
a handful of parsley, finely chopped (plus any other herbs you have lying around; I also used chives and basil)
salt and pepper to taste
-----

Combine everything and season to taste (mine didn't need salt because the feta was salty enough).

Let it sit for a while so the flavours soak into the lentils.

Serve both salads with some roast chicken, perhaps if you feel like it.

"Summer Panzanella"

Adapted from 'This Is A Cookbook: Recipes For Real Life' by Eli and Max Sussman

4 heirloom tomatoes or 6 plum tomatoes, cut into big pieces (I used 2 punnets of cherry tomatoes)
1 clove garlic, minced
1 Tbs red wine vinegar
1 Tbs balsamic vinegar
1 Tbs EVOO
1/4 cup olive oil (not EV)
1/2 cup basil leaved, packed, cut into chiffonade
1 loaf crusty sourdough bread, unsliced
1 ball mozzarella
Salt and pepper, to taste

-----

Preheat oven to 200°C (400°F)

Combine the tomatoes, garlic, vinegars, EEVO and basil in a large bowl. Salt and pepper to taste and set aside.

Tear the bread into 2cm pieces (the book said to cut the crusts off first but I tried both ways and I couldn't tell the difference) and put them on a baking sheet. Drizzle over the olive oil and salt to taste and toss everything together so it's all coated in oil.

Bake bread for 12 minutes or until crispy outside and still chewy inside.

Add croutons to bowl with tomatoes. Tear in mozzarella and toss everything together. Serve straight away.
